National Cherry Popover Day is September 1st.

Popovers are light hollow rolls made from an egg batter, which rises to form a hollow shell when baked. There are special popover pans to make them, but you can get away with using a muffin pan. The name “popover” comes from the batter swelling or “popping” over the top of the pan while baking.

Popovers may be served plain with butter or topped with fruit and whipped cream. They may also be flavored with herbs and cheese or fruit. Though there isn’t a National Popover day, there are three national fruit-favored popover days. (Blueberry in March and raspberry in May.)

Cherry Popovers

3 eggs, room temperature
1-1/2 cup all-purpose flour, room temperature
1 cup milk, room temperature
1/2 cup heavy cream, room temperature
zest from half a lemon
salt to taste
1/2 cup cherries, pitted and halved

Preheat oven to 400F. Grease a popover or muffin pan. Beat eggs slightly, then beat in flour, milk, cream, zest, and salt until just smooth; being careful not to overbeat. Distribute batter evenly amongst cups, about 2/3 full. Drop some cherries into each cup. Bake 35 minutes, or until popovers are poofy and a light golden brown. Serve hot.
