2 cups blueberries (if frozen thaw)
1/2 cup granulated sugar
1 tsp. lemon rind
1/4 cup granulated sugar
3 teaspoons baking powder
1-1/3 cups all-purpose flour
1/2 teaspoon salt
1/4 cup cold butter
1 egg
3/4 cup milk
Preheat oven to 350F.
Lightly grease a 9-inch pan.
Combine blueberries, sugar and lemon rind and place in baking pan.
In a separate bowl combine flour, sugar, baking powder, and salt.
Cut in butter.
Mix egg and milk together and add to the flour mixture.
Mix until just moistened.
Pour over blueberries.
Bake 45-50 minutes.
Serve hot or cold with fresh cream.
