1-1/2 pounds dried black turtle beans
1/2 lb. smoked link sausage, cut into bit-sized pieces
1 lb. pork, such as boneless style ribs
1 lb. beef, such as stew beef, in chunks
1/2 lb. smoked ham, cubed
1 large bell pepper, diced
4 large onions, diced
6 cloves garlic, diced
3/4 cup diced celery
1/4 cup minced parsley
2 tablespoons minced fresh oregano
2 tablespoons minced basil
2 bay leaves
pinch of ground cloves
salt & pepper to taste
4 beef bouillon cubes
2 tablespoons vinegar
12 to 18 cups cooked rice
1 white onion, chopped
Rinse beans, then soak overnight in a bowl of water, be sure beans are well covered with water.
Brown bulk sausage in a skillet; pour off excess grease.
Add other meats and stir to brown.
Add bell pepper, onion, garlic, celery, parsley, oregano, basil, bay leaf, and cloves.
Season to with salt and pepper.
Drain beans and add bean to the pan along with enough fresh water to cover everything by two inches.
Stir in bouillon cubes.
Bring up to a boil, reduce to a simmer 6-8 hours, stirring occasionally. Add water if more is needed.
About an hour before serving, stir in vinegar.
Serve beans and meat in a bowl over rice. Top with fresh chopped onion.
