2 tablespoons butter
1/4 cup chopped onion
1 large clove garlic, minced
1 red or green bell pepper, diced
1 rib celery, thinly sliced
(14.5 oz can stewed tomatoes
1/4 cup dry white wine
2 drops Tabasco sauce, or to taste
1 teaspoon dried leaf thyme
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
6 oz. linguine
2 teaspoons Cajun seasoning
1 pound shrimp, shelled & deveined

Cook pasta according to package directions, Meanwhile, melt butter in a large saucepan. Add and saute onion, garlic, bell pepper, and celery until tender. Add tomatoes, wine, Tabasco, thyme salt, and pepper. Simmer over low heat, stirring occasionally, for 30 minutes. Sprinkle shrimp with Cajun seasoning. Add shrimp and cook until shrimp are opaque and curled, about 8 to 10 minutes. Drain pasta and toss with shrimp.
