2 tablespoons salt
1/4 teaspoon black pepper
1/4 teaspoon ground white pepper
3 lbs. chicken parts
6 cups water
2 thin slices fresh ginger
5 green onions, sliced lengthwise
1-1/2 cups Shaoxing rice wine
2 teaspoon granulated sugar

Combine salt and peppers. Rub all over chicken. Let stand 10 minutes. Meanwhile, bring 6 cups of water to a boil in a large pot. Add the ginger and green onion. Add the chicken, add more water if need to cover chicken. Return to a boil. Simmer 10 minutes, gently stir at the halfway mark. Turn off the heat, cover, and allow the chicken to poach undisturbed 30 minutes. Transfer chicken to a casserole dish, discard all but a cup of the liquid. Whisk together the reserved liquid with the wine and sugar. Pour over chicken. Cover and refigerate one hour to overnight. Serve cold.
