4 ounces lasagna noodles
1 onion, chopped
1 cup grated cheddar cheese
2 cups leftover mashed potatoes
2 tablespoons butter
salt & pepper
Preheat oven to 350F.
Butter a casserole dish.
Cook noodles according to package and set aside.
Melt butter in saucepan.
Add onions and saut until softened and beginning to brown.
Combine the cheese, mashed potatoes, salt and pepper to taste.
Layer noodles in the bottom of the casserole dish.
Add a layer of the potato/cheese mixture, then some of the onions.
Continue layering, finishing with the onions.
Bake to heat through, 15-20 minutes.
