1-1/2 lb. asparagus spears
6 slices Swiss cheese
6 slices prosciutto
ground black pepper to taste
1/2 cup butter, melted
1-1/4 cup Italian-style dried breadcrumbs
3/4 cup grated Parmesan cheese
Preheat oven to 350F.
Bring a large pot of water to a boil. Add asparagus to water, and cook one minute, two minutes if asparagus is thick.
Layer a slice of cheese on a slice of prosciutto, add 3 to 4 asparagus spears, then season with salt and pepper.
Roll cheese and meat around asparagus, and place in a baking pan seam-side down. Repeat with remaining prosciutto
Pour melted butter over the top and sprinkle with breadcrumbs and Parmesan cheese.
Bake for 15-20 minutes.
