serves 4-5

1-1/2 tablespoons butter
1-1/2 tablespoons all-purpose flour
1 cup milk
salt & pepper
1/2 cup shredded sharp Cheddar cheese
1-1/2 tablespoons butter
1/8 cup diced onion
6 eggs, beaten
1/2 cup diced ham

Grease a 9-inch baking pan.
Make the cheese sauce: Melt 3 tablespoons butter.
Quickly stir in the flour; stir until smooth.
Stir in milk and season with salt and pepper.
Stir until smooth and thick.
Stir in cheese; set aside.
Saute butter and onions.
Pour the beaten eggs and ham into the skillet; scramble until mostly set but still moist.
Fold in cheese sauce.
Pour mixture into the prepared baking pan. Cover and chill for 20 minutes to overnight.
Preheat oven to 350F.
Bake egg and ham dish for 30 minutes.
