February 18th is National Crab Stuffed Flounder Day.
This dish is common in the gulf coast area of Alabama, Mississippi, and Louisiana. Flounder is a mild, delicate fish. When stuffed with rich, succulent crabmeat, a simple meal becomes a fancy meal.
Crab Stuffed Flounder
1/8 cup butter
1/8 cup celery, chopped
1/8 cup chopped green onions
1 clove garlic, minced
1/2 cup breadcrumbs
1/4 lb. shrimp, boiled and chopped
1/4 lb. crabmeat, cooked and shredded
1 tablespoon chopped parsley
4 thin flounder fillets
salt and pepper
Preheat oven to 375F. Grease a baking dish.
Melt butter in a pan then add and saute celery, green onions, and garlic.
Remove from heat and add breadcrumbs, shrimp, crab and parsley. Season with salt and pepper; mix well.
Place one half of the flounder fillets in the baking dish.
Cover fillets with stuffing mixture.
Place remaining fillets on top.
Cover baking dish with foil. Bake 35 minutes.
Remove foil and bake for an additional 5 minutes or until fish is cooked through.
