January 5th is National Whipped Cream Day.
Aaron “Bunny” Lapin, the founder Reddi-wip was born on this day in 1914. In 1948, he invented Reddi-wip, and a new valve suitable for whipped cream, with a fluted tip, and a tilt-to-open design that popped back to the center preserving the propellant gases.
Whipped cream is simply cream that is whipped to add air and volume until light and fluffy. The cream is often flavored with sugar, vanilla and/or extracts and spices. Over-whipped cream turns to butter. It has been around a long time with recipes dating back to the 16th century. It was called milk snow or snow cream.
Desserts and beverages are topped whipped cream and some desserts have whipped cream folded into them such as mousses.
Crème Chantilly or Chantilly Cream is synonymous with whipped cream now, though originally Chantilly was sweetened and whipped cream was not.
