December 5 is National Sachertorte Day.
Sachertorte or Sacher Torte is a dense two layer chocolate cake. Each layer is spread with a thin coating of apricot jam. The cake is then topped with a dark, rich chocolate icing. It is traditionally served with unsweetened whipped cream. It was created by Austrian Franz Sacher in 1832 for Prince Wenzel von Metternich in Vienna, Austria. The sachertorte is one of the most famous Viennese culinary specialties.
Recipes similar to the sachertorte appeared in cookbooks as early 1718.
“The Original Sacher Torte” is still made mostly by hand using Franz Sacher’s recipe and that recipe is a closely guarded secret. More than 360,000 cakes a year are made in Vienna. They are shipped all over the world.
