This is also called Mandlebread.
makes: about 30

3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon nutmeg
pinch of salt
1/2 cup honey
6 tablespoons butter, cut into small pieces
3 eggs
2 tablespoons orange juice concentrate
1/2 teaspoon vanilla
1/4 cup chopped almonds
1/4 cup chopped pistachios
1/2 tablespoon lemon zest
1/2 tablespoon orange zest
1/2 cup granulated sugar mixed with 2 tablespoons ground cinnamon

Preheat oven to 350°F.
Combine flour, baking powder, nutmeg, and salt; set aside.
Place honey in a microwave safe bowl and heat for 20 seconds.
Beat butter into warmed honey.
Beat in eggs, one at a time.
Add orange juice concentrate and vanilla.
Gradually add in dry ingredients.
Stir in almonds, pistachios, lemon and orange zest.
Divide in half and shape in to slightly flattened logs, about 3 ” wide and 2 ” high. Do this directly on the cookie sheet.
Sprinkle with some of the cinnamon/sugar mixture.
Bake logs 25-30 minutes, or until slightly firm to the touch.
Transfer logs to a cutting board.
Cut mandelbrot into slices 1/2″ thick.
Dredge both sides of mandelbrot with cinnamon/sugar mixture.
Arrange mandelbrot, cut side down, on baking sheet 1 inch apart.
Bake 6-8 minutes or until firm.
Transfer to wire racks to cool.
