1 pound poppy seeds, ground
2 cups honey
1/2 cup granulated sugar
2 cups chopped nuts
pinch of salt
1/2 teaspoon powdered ginger

Heat honey and sugar over medium-low heat until syrupy.
Stir in the ground poppy seeds/
Cook until thick, stirring frequently about 20 minutes.
Drop a little of the mixture in a bowl of water, if it doesn’t run it’s ready.
Stir in the nuts and salt.
With moist hands pat out mixture onto wet board to about 1/2 inches in thickness.
Cool 5 minutes.
Cut with a sharp knife into diamonds, dip knife frequently into hot water.
Cool completely and lift from board with a spatula.
