3 white potatoes
2 cups chopped boiled chicken or smoked ham
3 hard-boiled eggs, peeled and diced
3 dill pickles, diced
1 cup sweet peas (thawed if frozen)
5 green onions, chopped
1/2 cup mayonnaise or to taste
salt and pepper to taste
slice dill pickles for garnish
Boil potatoes and carrots in salted water until fork tender.
Drain off water and cool to room temperature.
Dice potatoes and carrots.
Place in a bowl and add and combine in bowl. Add chicken, eggs, pickles, peas, and green onions.
Stir in mayonnaise, salt, and pepper.
Refrigerate 2 hours.
Garnish with slice pickles.
